Anyone know of a way to create a property that returns the domain a Mac OS X computer is joined to?

You mean the AD domain? This property is part of the Macintosh Network Information analysis in our Inventory and License site:

if exists distinguished name of local computer of active directory then distinguished name of local computer of active directory else “<N/A>”
