Last update date for an agent installed on an endpoint

I am looking to create an analysis which gives me the last time security agent was updated or the last time a signature update was applied.

If you have a BigFix Compliance license, take a look at the Client Manager for Endpoint Protection content site – it contains fixlets and analyses to report on AV info/status for several anti-malware products (Trend Micro, McAfee, Symantec, Sophos, Windows Defender). If you don’t find what you’re looking for, it should at least give you an idea of where to start on your own analysis!
