I would like to create an automated group with systems that have not checked into BigFix in the last week or longer. Can this be done, and how would this be done?

You can’t do this with automatic groups.
Automatic groups populate by the clients evaluating the relevance clauses and adding themselves to the group if they qualify - clients not reporting will not evaluate and will not add themselves.
You could do it using Web Reports though.

Use column picker to select last report time, and then just sort descending - much easier.
