As the title suggests, I would like to know if it’s possible to rename a custom site, or if I need to create a totally new custom site and copy content from the old (misnamed) custom site to the new one…

Unfortunately custom sites cannot be renamed. I think you’ll have to create a new custom site with the new name, export all content from the existing custom site, and import it into the new one.
