On the Web Reports home page there is a Total Computers report that can be exported. Is there a way to get a break down of which are desktops and servers?

Unfortunately, no. That particular graph has values that are stored periodically by the web reports, but it only stores the aggregate values and not the underlying details of every computer (thus you can’t filter it and there isn’t a good way to get breakdowns).
You might consider using scheduled activities to store a report daily with a breakdown of servers/workstations.
